At Xiqué, we cook with what the land and sea of Oaxaca generously provide. We use native corn, fresh herbs, Pacific fish, seasonal fruits, and local spices. Our chef, Alberto Quintana, collaborates with nearby producers and brings new life to traditional Mexican techniques.
